A homestyle Indian coconut-based curry where tofu and chickpeas simmer in fragrant masala, absorbing spices for a comforting, richly textured vegetarian meal.
Use dried chickpeas soaked overnight and pressure-cooked, reserving some cooking liquid to enrich the curry instead of relying only on canned chickpeas and water.
Prepare a fresh masala by dry-roasting cumin and coriander seeds and grinding them with tomato, onion, ginger and garlic, then fry this paste until oil separates before adding coconut milk.
