Italian-style mixed meat skewers featuring four different meats with peppers and sage. The air fryer creates a crispy exterior while keeping the meats juicy inside.

Italian meat skewers are a simple mix of meats, olive oil, herbs, and peppers cooked hot for browning and juiciness.

  • Keep the mixed-meat structure, especially sausage, veal, and pork or chicken, because Italian skewers are typically a butcher-style assortment rather than a single meat.

  • Retain extra virgin olive oil, peppers, and sage as the flavor spine.

Avoid

  • Calling the air fryer version the traditional method

  • Using one marinade that tastes more American than Italian

11 oz sausage

4 oz sweet pancetta

11 oz veal

13 oz chicken thighs

4 oz red peppers

4 oz yellow peppers

12 leaves sage

½ oz extra virgin olive oil

fine salt

Cut sausage into chunks (keep casing on for moisture). Cut pancetta into 2cm thick strips and veal into 2cm cubes.

Cut chicken thighs into 2cm pieces. Cut red and yellow peppers into small squares matching the meat size.

Thread ingredients: sausage + pepper + pancetta + pepper + veal + sage leaf. Repeat pattern.

Make 8 skewers total, packing ingredients tightly but leaving 2cm free at each end. Place in air fryer basket and drizzle with olive oil.

Cook at 320°F (320°F) for 13 minutes, turning at 6-7 minutes. Season with salt and serve immediately.
